Take your chicken and some oil, with the seasoning mix - 1 tsp Onion powder, 1 tsp garlic powder, ½ tsp ginger, 1 tsp cumin, ½ tsp coriander, ½ tsp turmeric, 2 tsp hot paprika, ½ tsp cayenne pepper, ¾ Salt. Cook the chicken in a pan with some oil on medium low heat until cooked. Once cooked cut into small pieces.
Take 2 cups Masa flour and ½ cup water with salt to taste. mix well and let it rest for few minutes. Roll into thin round tacos using the roti press ( you can use rolling pin too). Roast them until cooked
Take some Onion and garlic with our favorite Thai chili pepper in a baking tray, Broil and char them. In a Mortar/ pestles make a paste of the charred veggies.
Take the roasted taco, place the chicken in between, top up with the onion garlic paste and chopped red onion, add some cilantro and enjoy !!
