Crack 3 eggs and add in ½ cup chopped onion, tomatoes and cilantro, add in chili powder ( according to your heat preference) and salt to taste.
In a pan take 1 tbsp butter and some chopped garlic ( the more the better). Let the garlic toast and then add in the eggs and scramble them. once cooked take them out.
Cut your baguette and spread some butter on it and toast, place the scrambled eggs on the bread with avocado slices (cut an avocado in half and slice it) and enjoy!!
