Braising is a low and slow cooking method that begins with dry heat and ends with moist heat. Sear beef at high temperatures in a heavy-bottomed Dutch oven to attain a caramelized crust (dry heat), and then cover and finish cooking in a liquid at lower temperatures (moist heat). This is a unique way of cooking Beef , It filled the beef with flavor and the beef becomes extremely tender and perfect to enjoy. Let's make Braised Beef Stuffed Pita Using this method!!
This Braised Beef Stuffed Pita is another mouth watering dish, it sure takes it's own time to cook and prepare nut it's worth the wait, as the saying goes "THE FRUIT OF PATIENCE IS SWEET". But in this case it's savory and flavorful. Without wasting time let's begin!!
Season your Beef with some salt and heat some oil in the dutch oven, and the beef get a dark sear.
Once the beef is seared well, take out the beef. In the same Dutch Oven (don’t wash it, to retain flavor) Put in 2 chopped onion , 2 tbsp minced garlic and the following aromatics - 3 cardamom cloves , 3 black cloves , 3 bay leaves , 10 peppercorn , 1/4 tsp cumin seeds , 3 dried chili, 1 inch cinnamon stick. Saute for 5 mins until the garlic is browned.
Add in 2 can crushed tomatoes and add salt as per taste. Cook it well for about 10 mins
Once the mix is cooked add in 32 ounces (945 ml) of Beef broth to it and let it simmer, Add the beef back in and cook it at 350 F for about 3 hours in the oven. Make sure to stir every 30 mins. Taste and adjust salt
Making the green chutney sauce - In a blender take 1 cup yogurt ,Bunch of cilantro and mint, 1 tsp cumin powder, 3 clove garlic ,½ lime juice , 1 tbsp sugar, 1 tsp salt and lastly our favorite Thai chili pepper. Blend everything well into a sauce.
Assembly - Take the cooked Beef (separate the beef from the broth) Shred the beef , Cut the Pita bread from the side, fill in the Beef and top up with the sauce. Enjoy !!
