Puff pastry, also known as pâte feuilletée, is a flaky light pastry made from a laminated dough composed of dough and butter or other solid fat. The butter is put inside the dough, making a paton that is repeatedly folded and rolled out before baking. So by using this dough and our leftover chicken we will be making Chicken And Spinach Puff Pastry!!!
Why throw away the leftover chicken when you can make a puffy and tasty Chicken And Spinach Puff Pastry. This is an easy and a great recipe to make for kids who hate spinach. If you have seen Popeye the sailor you will know how good spinach, is so let's get started!!
In a pan on medium low heat take some oil, 1 cup diced onion, seasoning mix - 1/2 tsp ginger, 1 tsp cumin, 1/2 tsp coriander, 1/2 tsp turmeric 2 tsp hot paprika, 1/2 tsp cayenne pepper, 1 tsp salt, cook until translucent.
Then add in 3 tbsp minced garlic and cook until garlic is toasted. Adjust with some more oil. Add in the leftover shredded chicken. Cook for 5-6 minutes. Finally add in lots of spinach (it will shrink while cooking). Cook until the spinach is cooked.
Take the puff pastry dough, place the chicken filling in the center, on top add some Mozzarella cheese and our favorite Thai chili pepper.
Close the pastry from all sides. Give it an egg wash and bake it at 420 F until golden brown. Enjoy!!
