Thai Green curry sauce is quite simple and is made of mainly green curry paste and coconutmilk. Water or broth is usually added to lighten the curry. We have some egg plants with us so let's add them in.
Eggplants have never been soo tasty before, This Eggplant Thai curry tastes marvelous and is perfect to eat with Pita bread or naan. It's creamy spicy and the flavors are exotic. Let's make it!!
Cut your egg plant into small pieces. Take a pan on medium heat add oil to it with eggplant pieces saute it half way through, Add finely chopped ginger ,garlic and stem of green onion.
Add 1 can coconut milk, 2 tbsp green curry paste , lemon grass and adjust with 1 ½ salt or according to your taste and simmer for 10-15 minutes.
Turn off the heat and garnish with chopped stem of green onion and Thai chili pepper.
