Fried Eggplant Onion ring burger
I love fried recipes and when it comes to Eggplants i have a soft spot for them, Today i will show you how to make crunchy savory Fried Eggplant and Onion rings burger. It's simple to make and just 3 ingredients so let's begin!!
Mozzarella cheese slice
1 Cup Chickpea flour
⅓ Cup Rice Flour
3 tbsp Corn starch
2 tsp Onion Powder
2 tsp Garlic Powder
3 Tsp hot paprika
1 tsp black pepper
2 tsp salt
Thai chili pepper
Cut the Eggplant into thin chip like slices, Cut onion in similar way and form rings.
Making the batter- in a bowl mix
1 Cup Chickpea flour, ⅓ Cup Rice Flour, 3 tbsp Corn starch, 2 tsp Onion Powder, 2 tsp Garlic Powder, 3 Tsp hot paprika, 1 tsp black pepper, 2 tsp salt, 1 ½ cup water mix well and make sure its thick enough like pancake batter.
Coat the Eggplant slices and onion rings in the batter, deep fry them at 350 F until they are golden brown.
Making the sauce- take 3 tbsp yogurt, 1 tsp onion powder, 1 tsp garlic powder, 1 tsp black pepper, ½ tsp salt and can’t forget our finely chopped Thai chili pepper.
Assembling the burger - Take the burger bun base put some sauce on it , put a slice of fried eggplant , mozzarella cheese slice, onion rings and some sauce on top of the bun. Enjoy!!
Top up with some Thai chili pepper and cilantro!!
