Lion’s mane mushrooms, also known ashou tou gu oryamabushitake, are large, white, shaggy mushrooms that resemble a lion’s mane as they grow. Its flavor may be compared to that of a lobster. It has many health benefits so let's make a crispy snack out of it !!

Break the Lion’s mane mushroom into small pieces( not too small nugget size). in a bowl take 1 cup chickpea flour, 3 tbsp cornstarch, 1 ½ tsp baking powder, 2 tsp onion powder, 2 tsp garlic powder, 1 tsp cumin, Salt and 1 cup warm water. Coat the mushroom pieces with the batter (shake off the excess batter).
In a pot heat oil at 350 F, we will flavor the oil first, put 4-5 garlic cloves and few curry leaves into oil, let them sit in oil until they are brown and take them out. Fry the mushroom’s in the same oil until golden brown.
Garnish the mushroom with chopped fried garlic and our favorite Thai chili pepper.
