Chili con carne aka Game day chili meaning "chili with meat", is a spicy stew containing chili peppers (sometimes in the form of chili powder),meat (usually beef),tomatoes and often pinto beans or kidney beans. Other seasonings may include garlic,onions, and cumin. The dish originated in northern Mexico or southern Texas.
Gameday chili is a great dish to enjoy your favorite game with some hot and spicy beans and beef. Kevil malone made gameday chili which was good enough but not spicy enough. This gameday chili with Thai chili pepper in my own South Asian style will surely hit you hard with the spiciness and juices. Let's get started!!
In a pan heat 3 tbsp oil and add aromatics - 3 Cardamom cloves,3 Black pepper cloves 3 bay Leaves, 10 Pepper corn, ½ tsp Cumin Seeds, 3 Dried chili, 1 inch Cinnamon stick. Add in onions cook until translucent.
Once Onions are translucent add 1 chopped green pepper, 3 tbsp garlic and 1 tsp ginger. Add 1 pound ground Beef and 1 tbsp chili powder. You can add or decrease the amount of garlic based on your taste.
Cook it halfway add in 1 can fire roasted crushed tomatoes , 1 can kidney beans and 1 cup bone broth let it simmer to your desired thickness. The longer you cook it, the thicker it will get. Be sure to stir while it's simmering and taste it and adjust with salt.
Turn off the heat and add in cilantro and Chopped Thai chili pepper and enjoy!!
Remember to take out the aromatics when serving.
