Pesto is a sauce that traditionally consists of crushed garlic, European pine nuts, coarse salt, basil leaves, and hard cheese such as Parmigiano-Reggiano or Pecorino Sardo, all blended with olive oil. So let's make pesto with eggs today!!
Take handful of basil leaves, cilantro and garlic cloves 10-15 (the more the better). Add in salt and freshly ground black pepper, and lots of olive oil pesto without olive oil isn't pesto. And we can't forget about our Thai chili pepper. Blend everything till it forms a paste.
Take your egg and separate the yolk and white. In a pan on medium low heat take some pesto in a cookie cutter and place the egg white on top. Let it cook for few minutes and place the egg yolk on top.
Don't cook the egg completely, take it off and place on flatbread with pesto on it. Garnish with some more pesto and enjoy!!!
