Ingredients
Pumpkin
- 1 cup onions
Avocado oil
- salt
Garlic
- 1 can coconut milk
- 2 tbsp red curry paste
- cilantro
Thai chili pepper
Directions
Chop about a quarter of your pumpkin off. Remove the seeds and skin before slicing into cubes.
Heat some oil in a pan chop onions and add salt, Once the onions are translucent, add in chopped garlic.
Once the garlic is toasted, add in coconut milk and curry paste and Thai chili pepper and mix together well. Add in your chopped pumpkin and let simmer for about 20 mins or until fork tender and serve hot.
Recipe Note
Garnish with cilantro and Thai chili pepper and enjoy!
