South Asian Salmon Rice

Ingredients
Salmon
- olive oil
- 1 tsp paprika
- ⅓ tsp cumin
- ¼ tsp coriander
- ¼ tsp garam masala
- ⅓ tsp salt
- ⅓ tsp garlic powder
- ⅓ tsp onion powder
- ⅓ tsp tumeric
- ⅓ tsp ground ginger
- ½ cup onion (sliced)
- 4 cloves garlic (minced)
- 1 cup rice (cooked)
- ½ bunch cilantro (chopped)
- ½ english cucumber (sliced)
- 1 slice red onion
- 2 slices tomato
- 1 wedge lime
- tamarind chutney
- green chutney
- Thai chili peppers
Directions
Marinating the salmon - In a bowl take your salmon with the seasoning mix - olive oil, 1 tsp paprika, ⅓ tsp cumin, ¼ tsp coriander, ¼ tsp garam masala, ⅓ tsp salt, ⅓ tsp garlic powder, ⅓ tsp onion powder, ⅓ tsp tumeric, ⅓ tsp ground ginger. Cook your rice alongside.
Add oil to a pan on medium low heat. Cook the salmon for 1-2 minutes. Flip, then cook for another 1-2 mins until cooked through.
Add onion to a pan, once translucent, add in chopped garlic. After 1 min, add your cooked rice and finely chopped cilantro.
Plate with cucumber, red onion, tomato and lime. Top with tamarind chutney, green chutney, and of course Thai chili pepper.
