Ingredients
- 1 cup zucchini
- 1 cup green pepper
- 1 cup onion
- 2 tbsp sunflower seeds
- 2 tbsp cashews
- 2 tbsp pistachios
- 4 clove garlic
- ½ cup olive oil
- 3 tbsp cilantro
- 1 pasta
- ¼ cup pasta water
- 3 tsp salt
Thai chili peppers
Directions
On medium heat, add 1/4 cup oil, sauté 1 cup zucchini, 1 cup green pepper, 1 cup onion, 2 tbsp sunflower seeds, 2 tbsp cashews, 2 tbsp pistachios, 4 clove garlic, ¼ cup olive oil, 2 tsp salt.
Blend the sautéed mixed along with 1 Thai chili peppers, ¼ cup olive oil.
Cook your pasta and save some pasta water, ¼ cup pasta water
Put the cooked pasta in the same pan that you sauté the vegetables, add in your sauce and some pasta water and adjust with salt.
